Simple Summer Shrimp Avocado Salad

Salad
- 1 large English Cucumber chopped
- 2 large Vine ripened Tomatoes chopped
- 1/4 cup Red onion finely chopped
- 2 whole Ripe avocado chunks
- 1/4 cup Green onion chopped
- 1 cup Shrimp peeled and deveined
- 2 tbsp Ghee
- 1/2 cup Cilantro finely chopped
- 1/4 cup Slivered almonds
Dressing
- 1/4 cup Extra virgin Olive oil
- 2 tbsp Lemon Juice
- Salt and Pepper to taste
In a frying pan, saute some peeled and devained shrimp in ghee till opaque, put to the side.
In a large serving bowl, combine all salad ingredients and cooked shrimp.
In a small bowl, whisk together dressing ingredients.
Pour dressing over top of salad and mix lightly.
Serve as a side for 4 people, or entree salad for 2 people.
