When September came around, we realized that our plates were full – of tasks. We both have full time jobs, side hustles and my son was going to do virtual schooling. I couldn’t seem to figure out how I was going to create an extra hour a night to cook! I was fearing that unfortunately we would fall back into our old ways of relying too much on take out.
Our friends are big fans of air fryers. They said that it was a life changing contraption and that, once we used it, it would be hard for us to cook any other way. So, like the impressionable adults we are, we skipped all the way to our local Amazon website and put an air-fryer in our carts and got next day delivery.
Of all the recipes we have done in the last two months, this air fryer Salmon recipe is basically in the top three of the yummy foods we have made in it.
This recipe is best made with fresh salmon from the fish counter at the grocery store. I found that I liked it both made with olive oil and ghee. The ghee obviously richer, but gives the fish a depth of flavour that balances out the strong taste of the salmon.
I love that I know I will have a great meal ready in no time after working too much (work from home problems) and a meal that my son will eat with no complaints.
This recipe literally comes together in 15 minutes, start to finish. The salmon is perfectly cooked, not dried out. I usually squeeze a little lemon juice on top before eating and it is just amazing. I am really sad to admit just how easy this recipe is. You just put everything together in a bowl, mix it up, top the salmon and stick it in the air-fryer!
The only thing you have to worry about is a side. We alternate between fresh cut salad or we stick some veggies in the air fryer after the salmon is done, and even that turns out just delicious!
15 Minute Easy Air-Fryer Salmon
Equipment
- Air fryer
Ingredients
- 3-4 lb salmon fillet deboned.
- 1 cup panko breadcrumbs
- 1 cup flat leaf parsley chopped
- 4 tbsp ghee or olive oil
- 1 tbsp roasted garlic flakes (I use Clubhouse Brand) but regular works as well
- 1/2 of a lemon juice, without the seeds
- salt & pepper to taste
Instructions
- Preheat the air-fryer at 400°C
- Mix all all the ingredients other than the salmon in a bowl.
- This is your topping. It should be coated nicely in the spices, fat and lemon juice
- Cut your fillet into individual servings, if you like skin, leave it on.
- Spoon a couple of table spoons of the topping onto the tops of the fillet
- Place the fillets into the preheated air fryer, and put it on the fish setting, or air fry at 380°C for 10 minutes.
- Serve with a side salad or some rice. Enjoy!
Notes
- We used ghee, but you can sub to olive oil if you want to lighten it up.
- We like to be generous with our topping.
