Summer is here and nothing says “Hello Sunshine!” like a frozen treat. Growing up we always loved any kind of frozen treat to cool off. it was hot and we had very little patience. A frozen treat took advantage of both. We could eat it fast and be happy to run back outside after instant gratification. I remember refusing to leave the store without the tri-coloured rocket Popsicle. I loved that I got to try three different flavours all at the same time. I was all for that. Summer wasn’t summer unless our fridge was jam-packed with frozen treats.
Anecdote Time
Fast forward to motherhood. We know more and are focused on giving our little ones the most nutrition dense foods. But I have to give us credit for not sacrificing flavour. This is the generation of mothers who find creative ways to make healthy versions of the treats they loved because we now know the actual impact of eating better. We know that processed foods and sugar laden foods do not help our children in the long run. We can all yield to the convenience of a processed food item, but i think nowadays, we are trying to focus on creating fun foods that are not only healthful but absolutely delicious for our kids’ mini palette.
I mean here I am trying to tie in the nostalgia of a multi layered Popsicle of my childhood and make it a treat I am not only happy to give my kid but actually happy that he laps it up! I mean, i made a Popcicle with:
Fresh strawberries, frozen fruit, Greek yogurt and honey. Four ingredients that you would feed your kids anyway, except my kids ASKS for these!
You can make these ahead and use any fruit you like. Think smoothies in frozen form. Heck, this might be just the thing for me if I get sick of smoothies, but still want the benefits.
Make this recipe the night before an expected hot day, and your kids… and I will keep begging you for more!
Ombre Yogurt Pops
Equipment
- Ice pop mould
- Blender
Ingredients
- 1/2 cup fresh fruit of choice (we used strawberries)
- 1/2 cup frozen fruit of choice (we used mango & dragon fruit)
- 1/2 cup Greek Yogurt
- 2 tbsp Honey optional
Instructions
- For the first layer, add fresh fruit and frozen fruit with honey (optional) to a blender and blend till smooth.
- Spoon this puree into the ice pop moulds making the first layer.
- Add yogurt to the fruit puree left in the bowl to lighten the colour. them spoon in the next layer.If you want to add more layers, keep adding more yogurt to the puree till you get the gradient you would like.
- Freeze for at least six hours.
- Run the mould under hot water for a couple of seconds to release the pops before calling your kids, their impatience will likely annoy you otherwise. (speaking from experience.)
