I don’t know about you, but I am not a big fan of heavy food in the summer. Also I am a BIG avocado fan. Like BIG! Also, there is this amazing recipe that I do on regular rotation that is SO GOOD it needs to be on the blog. It’s simple. It’s delicious. It’s simply delicious! All you need are some ingredients you might already have on hand, and you chop, combine and eat! With a kid, simple and fast always wins because then I’m not tempted to get take out.
Anecdote Time
Summertime to me is sacred. I literally cannot wait to do anything but chores. To me cooking is a total chore if I am doing it to meal prep for my family. If I am making a recipe to feed others or for an event, I am that much more interested in making sure it turns out incredible. Is that strange? I mean I don’t HATE feeding my family, I mean that it becomes more so a routine. Everyone has their favorite things that they will eat, we have a bit of a rotation going, and as a result of my own schedule, I can’t cook every day.
When I make this simple salad, I literally feel like I’m cooking for company because it is so visually appealing yet so super easy I can make it every work night, multiple times a night, if asked.
So here goes, it may be on regular rotation at my house, but I sincerely hope it becomes a favorite at your house too! Also, I realize that its so easy, I didn’t really need a recipe, but I think it needs a spot to shine on the blog, cementing it’s value in my life… so there.
Simple Summer Shrimp Avocado Salad
Ingredients
Salad
- 1 large English Cucumber chopped
- 2 large Vine ripened Tomatoes chopped
- 1/4 cup Red onion finely chopped
- 2 whole Ripe avocado chunks
- 1/4 cup Green onion chopped
- 1 cup Shrimp peeled and deveined
- 2 tbsp Ghee
- 1/2 cup Cilantro finely chopped
- 1/4 cup Slivered almonds
Dressing
- 1/4 cup Extra virgin Olive oil
- 2 tbsp Lemon Juice
- Salt and Pepper to taste
Instructions
- In a frying pan, saute some peeled and devained shrimp in ghee till opaque, put to the side.
- In a large serving bowl, combine all salad ingredients and cooked shrimp.
- In a small bowl, whisk together dressing ingredients.
- Pour dressing over top of salad and mix lightly.
- Serve as a side for 4 people, or entree salad for 2 people.
