Quick and Easy Air-fryer Chicken Leg Quarters & Date walnut Kale Salad

for the Chicken Leg Quarters
- 6 Chicken leg quarters with skin scored
- 2 tbsp Mustard oil Sub: olive Oil
- 2 tbsp Lemon juice
- 1 tbsp Clubhouse roasted garlic spice blend
- 1 tbsp Clubhouse Montreal chicken spice blend
- 1 tbsp Dried parsley
- 1 tsp Cumin powder
- 1 tsp Red chilli powder (optional)
- Salt and pepper to taste
For the Salad (per person)
- 1.5 cups Baby Kale and Baby Spinach Mix
- olive oil
- lemon juice
- salt and pepper to taste
- Red onion thinly sliced
- Cucumbers sliced
- Goat's Cheese crumbled
- Dates pitted and sliced
- walnuts broken
- Date Syrup ( we use D'Vash brand) Sub: Balsamic Glaze (Nonna Pia's is a fave brand)
CHICKEN
Preheat your air-fryer to 380°C
Take all marinade ingredients and mix together in a bowl.
Score all your chicken quarters with a knife.
Brush on the marinade, making sure to get into all the crevises of the chicken.
Lay the chicken out in the air-fryer basket.
Air-fry till golden and the chicken skin is crispy. about 25-35 min.
SALAD
In a salad bowl, add your greens and the olive oil, lemon juice, S&P. Massage well.
Top with all the toppings listed above and give it a quick toss!
Plate your chicken and add the salad and ENJOY!
